PICKLED OLIVES

PERRINI selects the best olives from ”Leccino” variety for the table olives under brine process (also called Riviera method). The olives, harvested manually or with pneumatic tools from half October to beginning of December are soon de-leaved, calibrated and selected, washed and then put into a mild solution composed of just water and salt (10% of salt), as the traditional recipes wants. At the end of the natural acid-lactic fermentation process, after the necessary monitor and chemical tests, check of water level and salt concentration, the product is available for sale in barrels of 140 kg (drained weight) or buckets (5Kg or 12Kg) or other packages (plastic trays of 400g, 1Kg or 2,5Kg, glass jars of 1Kg).
Three sizes are available: 14mm (480 fruits/Kg), 16mm (400 fruits/Kg) and 18mm (300 fruits/Kg).
Pitted olives are also available.
The olives are certified as Organic.
